Compared to fresh garlic, stored garlic extract contains only small amounts of allicin and alliin. What is found in larger and stable amounts, however, is the water-soluble sulphur compound S-allyl cysteine (SAC). The result of this patented production method is a tablet that is 20 times more concentrated than fresh garlic on desired substances such as SAC.
